France: Curious winemaking practices

(TheTelegraph) - The makers of the most expensive Burgundy wines have changed the rule book to make grape-picking by hand compulsory in bid to defend the region's age-old traditions. Here are some other practices: 1. Pigeage – a French term for the process or stomping grapes in an open area or fermentation tanks. Feet are still used in many domains.
There are regular accidents. Two French men died in 208 after breathing in carbon dioxide while crushing grapes in a home-made six feet square wooden vat.
2. La Paulée is a convivial Burgundian fête shared by growers and their guests, who turn up with current releases and older vintages from the most sought after domains. Can get rowdy.
