Winemakers across Australia have had to switch on their science caps following a year of natural disasters and unseasonal weather not making favourable ingredients when trying to produce a stellar vintage. Renowned wine writer Jeremy Oliver said the challenging year had forced winemakers to focus on the science of viticulture. "Winemaking is part science and part art. In tough years it's majority science," he said.
