Dom Pérignon has undergone a dramatic evolution in its philosophy and ethos, according to chef de cave Richard Geoffroy, and it looks like the end of the traditional "vintage" philosophy, where the wine isn't released every year.

Speaking at a grand tasting held in the historic abbey at Hautvillers – where the Benedictine monk Dom Pérignon spent his life – Geoffroy said the luxury Champagne brand was no longer concerned with "artificial limitations on its release.".
